Peter's Favourite Holiday Cocktail

I was at a holiday party a couple weeks ago and had a Christmas inspired cocktail that I really enjoyed. I left the party with the recipe and decided I would make it for the family when I’m home for the holidays this year. Well, it turns out I didn’t pay much attention to the recipe that night because I’m looking at it for what feels like the first time and things are looking wee bit more complicated than I originally thought (see below).

With multiple steps that include steeping, zesting, and toasting, and ingredients that go way beyond ‘vodka’ and ‘soda’, there’s no question I’m completely outside my depth on this one. But I’m going for it anyway. How hard can it be, right?

From me to you this season, I give you the, ‘holy-crap-this-is-complicated-Christmas-inspired-cocktail: The Old Man & The Sea.’

Bottoms up.

Rosemary-Infused Syrup

1 bunch fresh, organic rosemary

4 cups hot water

4 cups of sugar

Zest of half an orange

2 cardamom pods, cracked

12 black peppercorns

1)      Steep the rosemary in hot water

2)      Add the orange zest to the sugar and leave for 30 minutes

3)      In medium saucepan, toast the cardamom pods and peppercorns over medium-low heat

4)      Add rosemary water and orange-infused sugar. Stir frequently until all the sugar has melted. Remove as it begins to boil

5)      Refrigerate

Old Man and the Sea

1oz white rum

.5oz Dubonnet Rouge

.5oz Laredo Maraschino Liqueur

.25oz rosemary-infused syrup

Rosemary-speared cherry, to garnish

1)      Combine all ingredients in a mixing glass. Add ice and mix well

2)      Strain over ice into an old-fashioned or rocks glass and finish with garnish
